Chef Lerato's Spicy Hummus Crusted Broccoli

Spicy Hummus Crusted Broccoli by Chef Lerato Mokonyane | @leelovesfood

Ingredients

Hummus: 

1 can bambara ground beans 

2 tbsp water 

1 tbsp lime juice 

1.5 tbsp olive oil 

1/2 tsp soy sauce 

1 clove garlic, minced 

1/2 tsp sesame oil 

1 tsp hot curry powder 

1.5 tbsp sriracha 

Broccoli: 

200g tenderstem broccoli 

1.5 tbsp grated Parmesan (optional) 

1.5 tbsp pine nuts 

1/2 tbsp chilli or olive oil 

Salt and pepper to taste  

Instructions

Prepare the Hummus: 

  1. In a blender or small food processor, combine white beans, olive oil, sesame oil, soy sauce, sriracha sauce garlic, curry powder, water, and lime juice. 

  2. Blend until smooth. If the dip is too thick, add additional water and blend again. Adjust seasonings to taste. 

Roast the Broccoli: 

  1. Preheat the Airfrver to 180Β°C. 

  2. In a mixing bowl, toss the broccoli with olive oil, salt, and pepper. 

  3. Roast the broccoli in the Airfryer for 12 minutes or until desired tenderness. 

Toast the Pine Nuts: 

  1. In a pan, toast the pine nuts until lightly golden brown. 

Assemble: 

  1. Place a generous dollop of hummus in the center of each plate, shaping it into a circle. 

  2. Top the hummus with the roasted broccoli and toasted pinenuts. 

  3. Grate Parmesan over the top if desired. 

Serve immediately, optionally adding a bit of chili for extra heat. Enjoy!
